The officer, this time from London's Metropolitan Police, intervened when he saw two individuals trying to steal the vehicle outside a shopping centre in Bedfordshire.
The offenders, who are described as being in their mid-20s, stabbed the man with a large blade before fleeing the scene - one on their own moped and the other on the stolen one.
The Met officer was then rushed to hospital, where he was given treatment for his wounds.
His injuries are thought not to be life-threatening.
